Paleo Granola with Seeds and Nuts

This recipe was adapted from granola recipes from The Paleo Mom and Paleo Parents. Both have delicious recipes for granola. Mine was easy and came out perfect on the first try.

2 cups raw pecans

2 cups shredded coconut

1 cup raw walnuts

1 cup raw hazelnuts

1 cup raw sunflower seeds

1 cup raw pumpkin seeds

1/4 cup sesame seeds

10 softened pitted dates*

1/2 cup raisins*

1/4 cup honey

3/4 cup coconut oil

1 Tbsp cinnamon

2 tsp nutmeg

1 tsp salt

*optional ingredient

Preheat the oven to 300 degrees. Line two large baking sheets with parchment paper. Melt the coconut oil and honey over medium-low heat. In a food processor, chop the pecans, walnuts and hazelnuts to a coarse grind. Remove from processor and place in an extra large mixing bowl. Next, chop the sunflower seeds and pumpkin seeds and add them to the nut mixture. Next, chop the dates and raisins with a sharp knife and fold into the nut and seed mixture.  Mix in the shredded coconut and spices. Finally pour the honey and coconut mixture over the the granola and stir well to combine. Spread the mixture onto the parchment lined baking sheets. Bake at 300 degrees for 30-45 minutes, stirring every 15 minutes.
