18 Weeks and first day of preschool
Today, I am 18 weeks pregnant with my girls. This is an exciting week. The boys started preschool today. Their teachers are fantastic! They have planned a lot of outside time and interactive tasks. They will also be doing some kitchen activities where they will be cooking. Their teacher asked if she could use some of my recipes so the boys can participate fully. How cool is that?
So what did the boys eat for breakfast on their first day of preschool? They had green eggs, homemade sauerkraut, milk fed pork liverwurst (from our CSA), marinated beets, sautéed kale with red onions and home brewed kombucha. The green eggs are of course from green chickens. Does this sound odd for a breakfast for a 3 1/2 year old? Some people might say yes. I say, no way. I want my boys to expose their palates to a diversity of flavors. Also, consider the nutrient density. What an amazing way to start the day. Preparation time took about 15 minutes. The beets and kale were left over from dinner and the eggs whip up in a snap.
Fortunately, my boys started eating this way from the beginning, so they don’t know any different. But, if you are trying to transition your family from something more typical like cereal and toast. Start small with dinner for breakfast. You can have chicken and potato or steak with carrots. Try to introduce more savory foods into the morning. If that is still too much, start with plain whole fat organic yogurt with berries. Sprinkle some toasted coconut flakes and pumpkin seeds on top for some crunch.
