Baked Plantain Chips

Preheat the oven to 350 degrees. Slice the off the ends of the plantain and cut them in half.

Next slice vertically through the skin.Peel the skin away from the plantain flesh.

Use a sharp knife or a mandolin slicer to cut 1/4 inch thick slices. Lay the slices on a parchment or foil lined baking sheet.


Sprinkle the slices with your seasoning*. Bake for 40-50 minutes. (Begin peaking in your oven every couple minutes after 40. You want the chips to be crisp.

They will burn quickly, so keep a close eye.) *Experiment with different seasoning or plain. The chips are an excellent source of resistant starch and a tasty way to scoop up your guacamole.
