Grass Fed Sloppy Joes!



I remember having Sloppy Joes as a kid. Who doesn’t?


I am seriously saying, these Sloppy Joes were a huge hit with all four kids. When I budget my time in the kitchen, I am always searching for ways to optimize my outcome.


If I am going to take the time to prepare a dish, I want it to be:
  • eaten

  • nutrient-dense

  • gut-friendly

  • encourage a broad palate

  • Taste good!

These Sloppy Joes fits all of those criteria!!


This recipe makes 12 servings


Ingredients:


1 Tbsp coconut oil 1 medium onion, diced 1 large yellow bell pepper, diced 4 garlic cloves, minced 1 tsp real salt 1 tsp yellow mustard 1/4 tsp ground cloves 1 tsp paprika 2 pounds 100% grass-fed ground beef 6 ounce can of tomato paste 2 Tbsp raw honey* 2 Tbsp apple cider vinegar


Putting it together:

  1. Melt the coconut oil in a large skillet over medium heat.

  2. Add the garlic, onion, and bell pepper. Sauté until soft.

  3. Next, add the spices and mustard, and stir until combined.

  4. Add the ground beef to the veggies and spices. Use a wooden spoon or fork to break it up and cook until it is no longer pink.

  5. Reduce the heat to low (so you don’t affect the raw honey) and add tomato paste, honey, and vinegar. Simmer for about 8 minutes.

* I typically buy my raw honey from our local farmer’s market, Thrive also has a nice option.

I served the Sloppy Joes on my Four Ingredient Grain-Free Buns for the kids and on a plate for me and the hubs. I added a simple baked white sweet potato, steamed peas, and a side salad with steamed broccoli, cauliflower, bell pepper, tomato, and avocado.
