Probiotic Rich Applesauce

4 pounds organic or wild apples

3 tsp cinnamon

Whey

pinch of salt

Wash, core, and quarter the apples.

Place them in a large pot with filtered water. Boil until soft

Drain and allow to cool for a couple of minutes.

Next, place apples in food processor and process until smooth. You will need to do this in batches. After each batch, put sauce in a large bowl. After all apples are processed, stir in cinnamon and salt.

Put applesauce into wide mouth pint size mason jars. Cap the jars lightly and allow to cool overnight. Next, stir in 1 TBSP whey into each jar. Cap jars lightly and allow to sit at room temperature for 8 hours. Then cap securely and place in refrigerator for up to 3 months.

Add this probiotic rich snack to your kiddos lunches.
