The Easiest Go To Snack Recipe: Grain Free Banana Squares




















Oh my how I love to hear the words, “Mommy, I am hungry”! I think I even hear those words in my sleep! It truly is amazing how much food these little creatures consume on a daily basis! Of course, they need to eat as their bodies are growing at such a rapid rate!


Children ages 1-2 grow 5 inches per year! Ages 2-3 children grow 3 1/2 inches in a year. By the age of 3-4 years, children will double their birth height!! From 3 years until puberty, children grow 2 inches per year!


Yes!! I want to fuel that growth with the good stuff. Sure, you can buy bars and high-quality snacks, but OMG the prices add up very quickly! The reality is that many kids are on the go and when they get hungry, I want to have something ready for them to eat and enjoy.


I also want to make sure that the snacks they are eating are free of:

  • gluten

  • refined sugar

  • crummy oils (canola, sunflower, safflower, and soy)

  • inflammatory ingredients such as dairy












Onto these magical little bars that are free of all of the above-mentioned nasties, easy to make, and super yummy!












This recipe makes a huge batch, which is great because you can easily freeze them and thaw them when you hear the words, “Mommy I am hungry!!!”


Ingredients:


5 medium ripe bananas, mashed 5 large eggs 1 tsp vanilla 3 cups blanched almond flour 1 tsp baking soda 1/2 tsp salt 3/4 cup Enjoy Life dairy-free chocolate chips


Putting it all together:

  1. Preheat the oven to 350F and line a large baking sheet with parchment paper.

  2. In a large bowl, whisk the mashed bananas, eggs, and vanilla until smooth.

  3. Stir in the almond flour, salt, and baking soda until fully combined.

  4. Fold in the chocolate chips. Pour mixture onto the baking sheet and bake for 18-20 minutes or until it is set and lightly brown along the edges.

  5. Cool completely before cutting into squares!
