Coconut Flour Raspberry Muffins

Coconut Flour Raspberry Muffins

6 eggs (room temperature)

4 TBSP Coconut Oil (melted)

2 TBSP Coconut Manna (melted)

1/2 tsp salt

1/2 tsp vanilla

1/2 tsp baking powder

1 cup fresh raspberries

1/2 cup diced banana

Blend together eggs, coconut oil, coconut manna, salt and vanilla. combine coconut flour with baking powder and thoroughly mix into batter until there are no lumps. Fold raspberries and banana into batter. Raspberries should be completely dry or the batter will not set. Pour batter into greased muffin cups or use the silicone muffin cups.  Bake in a 400 degree F oven for 18-20 minutes. Makes 12 muffins.

Notes:

I did not post a link to the coconut oil because it is outrageously expensive online. You can find good quality organic coconut oil from Trader Joes or Costco. You can also find coconut flour at select Costco stores around the country or any Whole Foods Market. The best online source for alternative flours is Honeyville. 

These muffins are a good source of protein, medium chain triglycerides (coconut oil) and fiber (coconut manna and flour). You will not miss the added sweetener with th natural sweetness from the berries and banana.
