Creamy cilantro garlic chicken


I planted my cilantro seeds back in March with the hope that some would grow into plants. Well, they all did! Now I have enough cilantro to add to every meal of the day! I’ve made cilantro smoothies, eggs, salads, and now… marinade/dressing.


All four kids had runny noses today, so I wanted to act fast! Thanks to my sister, I’ve started making my own herbal tinctures to help remedy colds, and earaches and boost immunity! I have been surprised by how quickly and well they work! More information on that later. In addition to giving them tinctures and sauerkraut all day… I wanted to get some more immune boosters in them. So, I changed my plain grilled chicken night to a marinade with tons of garlic.


Garlic has amazing health benefits, including boosting the immune system!


One large 12-week study found that a daily garlic supplement reduced the number of colds by 63% compared with a placebo (1).


The average length of cold symptoms was also reduced by 70%, from 5 days in placebo to just 1.5 days in the garlic group.

A 1 ounce (28 grams) serving of garlic contains (3):


Manganese: 23% of the RDA. Vitamin B6: 17% of the RDA. Vitamin C: 15% of the RDA. Selenium: 6% of the RDA. Fiber: 0.6 gram. Decent amounts of calcium, copper, potassium, phosphorus, iron, and vitamin B1.


Other super immune boosters in this recipe are the fresh herbs and apple cider vinegar!


So, back to the deliciousness… Here is the recipe for this fabulous, immune-boosting, ultra-healthy marinade!


A LOT of cilantro..3 cups chopped


1 small bunch of basil


1 whole head of garlic


1 medium apple


1 whole navel orange


1/2 cup olive oil


1/3 cup raw apple cider vinegar


cracked black pepper


Blend all in a Vitamix (LOVE mine!!! Essential tool!) or high-speed blender


Use as a dressing or marinade.


I used 4 pounds of chicken breasts and marinated them for 4 hours in a zip lock bag.
