Sunflower seed clusters

This recipe was born from the need to use up a lot of seeds in my pantry! They were delicious, easy to make and boys loved them!

2 1/2 cups sunflower seeds

2 cups pumpkin seeds

1 cup sesame seeds

1/2.cup coconut oil

12 pitted dates

5 large eggs

2 Tbsp ground flax meal

1/2 cup raisins

Preheat the oven to 350 degrees. Grind the pumpkin seeds in a food processor until they form a coarse meal. Pour them into a large bowl. Add 2 cups of sunflower seeds to the food processor and grind until it forms a sandy texture. Next add the melted coconut oil and 12 softened pitted dates. Continue to grind, forming a nut butter. Next add the eggs, flax meal, sesame seeds and extracts, mix until thouroughly combined. Pour mixtur into the bowl with the pumpkin seeds. Stir well to combine. Finally fold in the raisins. Bake on a parchment lined baking pan at 350 for 15 minutes. Store in the freezer for up to six months.
