Does adding spinach to a chocolate chip cookie make it healthy? Yes, it sure makes it healthier! Does it make it healthy food? I suppose it depends on your perspective!
A cookie is still a cookie. But if my kids are going to eat cookies, which they absolutely do; I want them to eat the healthiest cookie.
Six Ingredients with big health benefits!
I think it is super awesome that you can combine these six simple ingredients and they turn into a delicious cookie with beneficial fiber, heart-healthy magnesium, and potassium.
Ingredients:
2 cups almond butter 1 cup soaked pitted dates 4 cups raw spinach 3 whole eggs 2 tsp baking soda 1/2 cup dark chocolate chips
Putting it together:
Preheat the oven to 350F. Line a baking sheet with parchment paper.
Add all ingredients, without the dark chocolate chips to your high-speed blender. (I use a Vitamix, because it is ahhhmazing!!)
Scoop all out into a medium bowl and add the dark chocolate chips.
Stir the chocolate chips into the batter using a stiff spatula.
Using a small cookie scoop, drop the batter onto the prepared baking sheet.*
Bake for 15 minutes. Cool completely and store in the fridge for a couple of days or in the freezer for longer.
*The cookies won’t spread much, so you can keep them close together.
